T1’s Tierra Firme keeps you in Panama a bit longer

This sit-down spot sits airside in Terminal T1, so you’re already past security and close to most Copa gates. Signage just says “Tierra Firme,” and it runs through the main T1 departures zone, so you don’t need to leave the concourse or ride a train to find it. It feels more like a regular airport restaurant than a bar kiosk, with actual tables and servers circulating between flights boarding to Bogotá, Lima, and the US.

Tierra Firme leans on Panamanian and Latin staples alongside standard airport dishes, so expect rice, plantains, and grilled meats next to burgers and club sandwiches. Menus at PTY restaurants usually come in Spanish and English, and you can pay in US dollars or card since Panama uses USD as legal tender. Portions tend to run larger than fast food in the same T1 hallway, which makes it a better call if you’ve got at least 45–60 minutes before boarding rather than a tight 25‑minute dash.

Figure on mid-range airport pricing: mains typically land in the US$12–20 band, and soft drinks or local beer add another US$3–6 to the bill. That keeps Tierra Firme below hotel-restaurant prices in Panama City but above the quick sandwich counters elsewhere in T1. If you want something more substantial than pastry and coffee but don’t want to gamble on a lounge buffet, this is the tier you’re paying for.

Service pace lines up with the rest of PTY Terminal T1: not rushed, but not slow enough to miss a normal boarding call to gate 1–30 if you sit near the front of the dining area. Staff are used to passengers announcing a boarding time, so say “mi vuelo embarca a las 15:30” if you’re tight on time. Tip in cash dollars or add 10–15% on the card slip; both are common in Panama.

One tip: PTY’s gate screens can be hard to see from inside Tierra Firme, so check your gate and boarding time at the main departures board just outside the restaurant before you sit down.
