In SEA’s Central Terminal food court, Beecher’s Handmade Cheese runs on one thing: Flagship cheddar. This is the same cheese they sell at Pike Place, and regulars treat it as a last taste of Seattle before heading to the N or S gates. It’s post-security in the Main terminal, and pricing sits in the mid-$$ range, but closer to “airport upscale” than fast food.

The move is simple: order the Flagship mac & cheese or the Flagship grilled cheese. Reviews on Yelp and Google keep calling those two out as worth the splurge, while the soups and other sandwiches get called forgettable. A tub of mac runs enough that sharing one between two people feels reasonable if you just want a few bites before a 3‑hour flight.

Expect a line here at peak times, especially around the 7–9 a.m. bank and the evening rush after 5 p.m. Multiple flyers mention that queues look rough but usually move in under 10–15 minutes. Seating in the Central Terminal can be scarce, so a lot of people grab their order to go and walk it to their A, B, or N gate instead of hunting for a table in front of the stand.

Watch out for temperature and price. Several reviews say the mac can sit under heat lamps and end up lukewarm, especially when they’re slammed at lunch. Others call the Flagship grilled cheese “stupid expensive” for what is basically bread, butter, and cheese. To keep the bill from spiraling, regulars skip sides and drinks here and just buy the mac, then grab water or snacks from a kiosk near their gate.

Tip: If you have a tight connection under 40 minutes, walk straight past the Central Terminal crowds, but if you’ve got an hour, Beecher’s is a solid single-stop meal you can eat at your gate.
