Brisket at Gate-side: Killen's BBQ in Terminal 1

Near the Southwest gates in Terminal 1, Killen's BBQ brings legit Texas smoke to the HOU concourse. This is post-security, so you’re fine grabbing a tray after you clear TSA and still making a boarding group A call. It’s a quick-service counter with some bar seating and a few tables tucked into the gate area.

Figure about $15–$20 for a brisket plate with one or two sides, which puts Killen's in the solid mid-range $$ tier for airport food. Portions run big enough that a single meat plate can work as a shared snack before a 2–3 hour flight. Sandwiches and smaller sides land closer to the $8–$12 mark.

The move here is the brisket, sliced, with a proper smoke ring and enough fat left on to stay moist under heat lamps. If they have it ready, go half moist / half lean brisket and grab classic sides like mac and cheese or beans instead of loading up on fries. Sauce is on the sweeter side; ask for it on the side and add it sparingly.

Killen's opens for the morning Southwest wave around 10:30–11:00 a.m. and usually runs through the early evening departures in Terminal 1. If you’re on a 6:00 a.m. flight out of HOU, this isn’t your breakfast spot; by lunchtime on Friday, lines can stack 10–15 people deep. Service stays counter-style, so even with a line, you’re generally out in under 15 minutes.

Watch timing: smoked meats run out on slower restock days, especially brisket after 7:00 p.m. Once that pan is empty, you’re down to sausage or pulled pork. Tip: if your flight leaves from a nearby C gate in Terminal 1, grab your food to go and eat at your actual gate where there’s usually more open seating.
